I had that problem too after a major WearOS update. Always with phone and watch paired, I succeeded uninstalling the swim.com app from the phone, rebooting both phone and watch, installed the swim....

Have you tried to upload manually?  Go to the swim.com app, open it and select history. Chose de workout you want, click on it and scroll down. Click upload. If it says it has already been uploaded...
